Aglet of the Week—bye bye chemical lattes

Ok, so I must admit that my husband and I are addicted to Almond Lattes in the morning. We make them at home with our  espresso machine (which saves a ton of money) plus when Starbucks stopped carrying almond syrup, that sealed the deal. The problem was that we were going through so much almond syrup, and it added up to big bucks—about $8 a bottle at our local store. So, I started making my own, once a week to keep it fresh, and keep it in the same old syrup bottle in the fridge. Now it only costs about $1.50 per bottle, and that’s with organic sugar (which is why mine looks brownish in the photo). An added bonus—no preservatives or additives! The recipe is below—happy coffee mornings! Jenna

Almond Syrup
(This makes enough for us for one week, but you can alter the ratios easily to suit your own use)
1 Cup of sugar
1 Cup of water
1 tsp almond extract

Put sugar and water in small saucepan. Bring to a hard boil and boil for one minute. Take off heat, add almond extract. When slightly cool, pour into bottle with funnel. It will keep in the refrigerator for a little more than a week.

Luckily there was a follow-up:  Erin Chase, creator of www.5dollardinners.com, can help! Erin´s new book, “The $5 Dollar Dinner Mom Cookbook,” has over 150 recipes that cost $5 or less to make. You´ll also learn Erin’s fool-proof method of how to clip coupons and shop economically to create fantastic meals without breaking the bank.  Now, that’s something I can relate to!  Here’s a recipe courtesy of Erin:

Beef Tacos:
Ingredients
1 cup white rice ($.20)
¾ pound ground beef ($1.12)
½ onion, chopped ($.15)
2 teaspoons ground cumin($.10)
salt and pepper
8 Old El Paso taco shells ($.75)
1 cup shredded iceberg lettuce ($.25)
1 plum tomato, chopped ($.53)
1 cup cheddar cheese ($.75)
½ cup sour cream ($.15)
4 ears of corn ($1)
Cost: $5.00

Directions:

  1. In a medium saucepan, bring 2 ½ cups of water to a boil, add the rice and bring back to a boil. Reduce the heat, cover and simmer for 20 minutes. Fluff the rice with a fork before serving.
  2. In a large skillet, brown ground beef with chopped onion. Drain excess fat. Return the beef to the skillet and add the ground cumin, salt and pepper and ¼ cup of water. Simmer for 4 to 5 minutes.
  3. Add the cooked taco meat to the taco shells and top with the shredded lettuce, diced tomato, and shredded cheddar cheese.
  4. Remove the husks and silk from the ears of corn and boil the corn in a large pot of water for 4 to 5 minutes or place the ears of corn in microwave-safe baking dish, cover with plastic wrap, and microwave for 7 to 9 minutes.
  5. Serve Beef Tacos with Rice and Corn on the Cob.

PS:  Frugal Fact:
Coupons for name-brand taco shells, like Old El Paso, and sour cream are released several times throughout the year. Match the coupon with a sale or store promotion for the lowest price on taco shells and sour cream.

Easy invisible ink

White crayons make easy invisible ink

My daughter got the cutest birthday invite the other day—a rolled up piece of paper with a highlighter inside, with the following text “I see a slumber party in your future… Color below with the highlighter to reveal your destiny.” When she colored over the empty space with the highlighter, the details of the party could be seen. The cool and easy way they did this—a white crayon! We’ve tried many “invisible ink” recipes, but white crayon is an elegant solution. You would think that years of egg dying for Easter would have given us this idea before, but it was a fun surprise to see it used on paper. The birthday girl credits an American Girl sleepover book for the idea—gotta love the folks at AG!

#1:  Don’t promise to bring your 4 year old an an Air Emerites toy plane when you’re flying from Dayton and all they have at the gift shop is very little.

#2: Do ask for extra luggage tags at check-in counter so when you get home, your son can hang them to his school tote and pretend he is going on a trip.  Serve pretzels and lemonade on his “flight” and cross your fingers that you don’t hit turbulance.

Erma Bombeck Writer’s Workshop Day 1

“How bad could a conference about humor writing be?” is what I kept saying to myself as I boarded the plane.  It’s not as if Jrb hasn’t been without me before and as long as I bring back [fill in the blank] airline, he’s a happy camper.  But the weather is finally getting better in Chicago, I have a column due next week, preparations need to get underway for my Mother’s Day Craft-Off  with fellow columnist, Irv Leavitt ~ that’s right I am finally going to bring “Mega-Bites down :)  and did I mention I have a book deadline in about 2 weeks?  But here I am am laughing it up with a bunch of AMAZING woman and men who all have such unique passions, wit, insight and visions, I feel so energized, happy and fortunate.

Today,  I ate lunch with the Amazing Steve (yes, that’s his name ~ at least according to Dave Barry who calls him the Amazing Steve everytime he sends Dave a mock- 24 Update (24, as in the TV show).  A gal at our table (Theresa) whose blog is here started to tell the Amazing Steve about this guy named “Amazing Steve” who writes on Dave Barry’s blog, not knowing “the Amazing Steve” she was talking about was really “The Amazing Steve” at the table.  I put it together for them.  They hugged, they laughted, they took pictures for their blogs….what a nice, strange world we live in.  To learn more abour Dave Barry and the Amazing Steve click This Link! Storybook Treasures

When jrb and I returned from California this week, you can only imagine how delighted we were to find a package waiting for us!  A package!  A package!  He sang as he danced around in a circle.  Will mail always make him this happy, I wondered as we tore open the box.  To my delight, it was a Scholastic Storybook Treasure DVD of our FAVORITE Doreen Cronin books which include Giggle Giggle, Quack, Duck for President and my personal favorite Diary of a Worm!

The DVD was sent to me to review and it did not disappoint.  The stories remained true to the spirit of the books, entertaining to both kids and adults.  Jrb loved listening to the stories in Spanish (no, he doesn’t speak Spanish, he just likes the sound of the language) and I loved the “talk about the stories” feature which encourages conversation about the story ~ which is always a bonus!

The other thing I LOVED was the  pacing of the stories. They were not fast-paced like so many other cartoons and movies, but instead  took their time as the story evolved which is a lot like real life, which is something that makes me very happy.

Thanks to the creators of the book “Hello Cupcake” (and Beth for introducing us to the book) for a terrific April Fool’s Day treat for my daughters’ classes. My girls love this book, and were so excited when what we made, according to them, “…looks just like the photo in the book!” — a rarity for us.
